Baked Pancakes Tutorial

Pancakes are awesome. Standing over the stove and making them one by one is not. I was tired of everyone enjoying fresh warm pancakes while I was still in the kitchen finishing up the last of the pancake batter. Not to mention the want to fill my freezer with homemade pancakes in a quick and economical way. This takes care of everything!

Let them cook a bit longer to brown them. I'm usually less concerned with how they look and more how they taste and they are always a hit!

Treat the batter like a pizza! Sprinkle blueberries on one half and chocolate chips on the other before baking. Use any additions you want!

For you French Toast fans, you could dip each slice of bread in your egg mixture and lay them in one layer on the baking pan. Then bake 10-14 minutes.

Baked Pancakes

2 cups pancake mix
1 1/2  cups milk
1 egg
1 tsp cinnamon (optional)

OR

2 cups of your favorite prepared pancake batter

Step 1

Mix all of the ingredients together. Don't over-mix, you want there to be some lumps.

Step 2

Pour batter into a large greased sheet pan and bake at 400 degrees for 9-12 minutes. Cut into squares and serve warm.

Sweet Lemon Pull-Apart Coffee Cake (made with Grand's Biscuits) Tutorial!

I was in the mood for something sweet tonight but not chocolate (surprisingly) and I couldn't decide which of my new recipes to make and post. I did a quick vote on my Facebook Fan Page and this was the winner!! It's like my Garlic-Parmesan Pull-apart bread recipe, only sweet and lemony! YAY!

Sweet Lemon Pull-Apart Coffee Cake

Ingredients


1/3 cup sugar
1/3 cup raisins
1/3 cup chopped pecans
2 tsp lemon zest
3 tsp butter, melted
1 can Grand's Biscuits, cut into quarters
2 Tbs lemon juice
1/2 cup powdered sugar

Step 1


                               In a bowl, combine the sugar, raisins, pecans, lemon zest, and butter.

Step 2




Add the quartered Grand's biscuits to the raisin/nut mixture. Stir to coat each piece. Place biscuit mixture into a greased bundt pan.

Step 3


Bake at 400 degrees for 20-25 minutes until browned on top. Turn out on plate.

Step 4


Mix together the lemon juice and powdered sugar. Drizzle over the warm cake. Serve warm.

Daddy/Daughter Mailboxes

While shopping at Target a few weeks ago, I found some cute paper mailboxes in the Valentine's Day trinket baskets. I think it was 1 dollar and the kit made two mailboxes. I thought they were just too cute so I brought them home, determined to find something to do with them. Target also had little tin mailboxes in the same area...pretty sure they were 3 dollars each or something close to that.

Say hello to our Daddy/Daughter Mailboxes!

Each morning, before my husband leaves for work, he scribbles a sweet message on an index card and puts one in each of the girls' mailboxes.

The girls wake up and immediately run to check the mail and see what Daddy has left for them. Today he left notes AND Little Debbie cupcakes. The girls were beyond thrilled.

Then throughout the day, the girls draw and write notes to their Daddy and put them in the mailboxes for him to enjoy when he gets home.

The looks on their (all three of them) faces was worth more than 1 dollar, I can tell you that right now.
