Summer Squash Bread Tutorial

Summer Squash Bread- Great way to use up the abundance of yellow squash from your summer garden.


1 1/2 cups flour 
1 teaspoon baking powder 
1/2 teaspoon baking soda 
1/4 teaspoon salt
2 teaspoons ground cinnamon 
2 eggs  
3/4 cup sugar 
1/2 cup vegetable oil  
2 teaspoons vanilla
2 cups shredded yellow squash (peel the tough outer layer first and discard)

Step 1

Shred the squash whole, stopping when you hit the seeds in the center, turn and shred the remaining sides. You can also cut the squash in half, remove seeds, and shred in a food processor.

Step 2

 Add all ingredients together in a mixer (or mix by hand). Mix until moistened.

Step 3

Pour batter into a greased loaf pan. Bake at 350 degrees for 45 minutes, or until a knife inserted in the center comes out clean.
