My husband and I have been married for uh...1, 2, 3, 4, 5, 6 years this November. We have been together for almost 8 years, total! If you read my info on my Facebook page, then you know we were engaged 6 days after we met for the first time.
We didn't live together until after we were married but I did wake up at ungodly hours, drive to his house, and make him breakfast before work...everyday for a more than a year. And once we got married, I continued to wake up with him and cook him breakfast. Two kids later, I still make him breakfast every morning but I do it Sunday night. Confused? He needed a breakfast that was healthy and portable and I needed sleep. So, this is what I do every Sunday night.
Yogurt and Fruit Parfaits
Plastic party cups! (I'd use a reusable container but I couldn't trust that they'd return home). 5 cups- fill half way up with your favorite brand/fat vanilla flavored yogurt. We use Yoplait low-fat Vanilla yogurt)
Place about 1/2 cup of fresh sliced berries on top of the yogurt. (Yes, mine are frozen in the picture and I regret that decision as it thawed and left a layer of berry water that needed to be drained off every morning). Sorry, Dear!!
Cover each cup with a fold-able sandwich bag or plastic wrap and put them in the fridge.
Fill a airtight container with granola cereal and 1/3 cup scoop. And all he has to do in the morning is put a scoop of granola on top of the fruit and re-cover. Then it just chills in his car's cup holder on the way to work. My husband keeps a spoon in his desk for his breakfast.
He's even lost a bit of weight since he started eating this for breakfast every morning. He says he honestly NEVER gets tired of this breakfast during the week. Even on the weekends when my family gets their pick of breakfast...waffles, bacon, eggs, homemade cinnamon rolls, French Toast...he'll sometimes ask for this. Its just GOOD!
