Trail Mix Peanut Butter Cookie Tutorial

I recently bought a bag of Trail Mix to snack on during the day. It had a wonderful array of delicious things in it and made the perfect snack while I chased two kids around. While eating a handful this morning, I had the idea of mixing the rest of the bag of trail mix into some homemade peanut butter cookies for a friends birthday. This idea was: The. Best. Idea. Ever. Behold, the Trail Mix Peanut Butter Cookie!


Trail Mix Peanut Butter Cookies


Ingredients

1/2 cup white sugar
1/2 cup packed brown sugar
1/2 cup peanut butter
1 stick of unsalted butter, softened (not melted)
1/4 cup Crisco
1 tsp Vanilla extract
1 egg
1 cup all-purpose flour
3/4 cup old fashioned oats
1/2 tsp baking powder
1/2 tsp baking soda
2 cups of your choice bagged trail mix (I used one with cashews, peanuts, almonds, raisins, cranberries, chocolate chips, peanut butter chips, and white chocolate chips)


Step 1

Preheat oven to 375 degrees. Beat the sugars, butters, Crisco, vanilla, and egg together until fluffy.

Step 2


Add the flour, oats, baking soda and baking powder. Mix until combined.

Step 3


Add the trail mix and stir to combine.

Step 4


Using a medium scoop or a teaspoon, drop spoonful sizes of dough on a parchment paper-lined cookie sheet about 1 inch apart. Flatten slightly with a fork in a criss-cross pattern.

Step 5 



Bake at 375 degrees for 9-12 minutes until they are golden brown. Let cool for a few minutes and the transfer to a cooling rack.

I have never seen a group of boys attack a plate of cookies like they did on Saturday. BOY actually told me I should call you for the recipe, but since you already posted it I think I am set. They were fantastic!
