Apple-Balsamic Pork Chops (FREEZER MEAL)

We love our chicken meals but sometimes we need a break! Pork Chops satisfy the whole family and these are delicious!

Apple Balsamic Pork Chops

Ingredients

4 boneless pork chops
1/4 cup apple cider (or apple juice)
1 cup chicken broth
1/4 cup apple jelly
2 teaspoons balsamic vinegar

To prepare for freezer: In a labeled Ziploc bag, combine all ingredients. Freeze flat.

To cook: Allow to thaw overnight in the fridge. Once thawed, remove the chops (leaving the sauce in the ziploc bag for a moment). Heat 2 tablespoons of oil in a large saute pan. Brown the chops on both sides. Pour the sauce over the chops, cover and cook for about 15-20 minutes or until pork is no longer pink. Remove chops from pan, whisk in 2 Tablespoons of cornstarch into the pan sauce, bring to a boil, whisking until thickened. Add the chops back into the pan. Serve chops with sauce over top.

I made this last Sunday for the family and I served Paula Deen's Apple Cranberry Dressing and Roasted Broccoli with it. OMG! It was wonderful! My only trouble was in adding the cornstarch directly to the sauce to make the gravy....it turned out clumpy. I whisked vigorously but still had lumps forming that I could not get rid of. Should I have made a roux with a small amount of the gravy before whisking it into the sauce in the pan?

If you mix the cornstarch with a little water to make a paste before adding to the sauce, your sauce will be lump-free :-)

I made this tonight and it was sooo good. I added 3 small, cored and sliced apples when you cook the chops and sauce together. I also added a couple of dashes of cinnamon, because cinnamon is a great spice to add to pork AND apples! Both my husband and I as well as our 4 kids said we could have eaten TWO pork chops each.

This sounds so good!!! Hubby is picky about pork, unless it's bacon or a ham. This recipe could help me hide the chops with different taste and textures. And Sarah......adding some Apple slices (and possibly cranberries) sounds even better. At what point do you adding your apples?

I'm glad I found your recipe. I am a mother of 3 and my nanny will be gone for the holidays so I am planning to start making freezer meals, but most of the recipes require slow cooker (crock pot), which is not available or hard to find here in the Philippines, and also worried with the amount of electricity it will consume in cooking it for long hours. I hope there are more recipes like this. Thank you so much for sharing.
