Mexican Chicken Alfredo Tutorial (FREEZER MEAL)

If you're a fan of Mexican...or chicken...or Alfredo pasta, then try this recipe! How can you go wrong, right?! This makes one 9X12 baking dish full, but this can easily be done in two 8X8 dishes. Eat one, freeze one!

This makes a great freezer meal. Just line your casserole with tinfoil and then saran wrap. Assemble the Mexican Chicken Alfredo like normal but instead of baking it, freeze it! To reheat, put the unwrapped frozen Mexican Chicken Alfredo back into the pan you froze it in, and let thaw overnight in the fridge. Once thawed, bake at 350 degrees for 45-50 minutes.

Mexican Chicken Alfredo

1lb spiral pasta, cooked
1lb cooked chicken (about 2-3 breasts), cubed
1 medium onion, chopped
2 jars (15oz each) Alfredo sauce
1 cup grated Parmesan cheese
1 cup salsa
1/4 cup milk
1 Tbs taco seasoning

 Step 1

Layer the cooked pasta in a baking dish.

Step 2

In a bowl, combine the cooked chicken, onion, Alfredo sauce, Parmesan cheese, salsa, milk, taco seasoning, and salt/pepper to taste.

Step 3

Pour Alfredo mixture over the pasta, stir a little to incorporate the sauce and pasta. Cover with tinfoil and bake at 350 degrees for 40 minutes.

OMG! this looks yummy! Although I am a Mexican who lives in Mexico City and we do not have "taco seasoning" that just does not exist here, I might as well have to look up the ingredients and figure out a way to make it...
Thank you so much!
BTW I love your blog.

What brand/type of salsa did you use??
I don't remember. I think it was Old El Paso salsa.

I don't understand the layering of tin foil and Saran wrap and how/what you mean we freeze it like that?

You lay foil in the baking fish, the saran wrap. Drop the assembled pasta into it, wrap tightly and freeze in the dish. Once it's solid, remove from the dish and replace meal package in the freezer until you need it. The reason for using both is that the plastic wrap keeps you from getting foil shards in your food and helps keep freezer burn away.=)

I made this and added 1.5 cups of corn just to get some more veggies into everyone... HUGE hit! So happy I have another one in the freezer.
