One Pot Shrimp and Basil Pasta


I'm pretty sure I could eat pasta everyday. Oh, and shrimp. I also hate doing dishes. So, this is my kind of recipe! Pasta and shrimp in one pot, so only one pot to wash!

One-Pot Shrimp and Basil Pasta

Ingredients

12 ounces dry spaghetti
1 (28oz) can diced tomatoes
2 cups chicken broth
1/2 medium onion, chopped
4 garlic cloves, sliced 
1 tsp dried oregano
1/3 cup fresh basil leaves
2 tsp salt
1 Tbl olive oil
1/4 tsp crushed red pepper flakes
1 (6oz) package baby spinach (I didn't have any on hand)
1 lb shrimp, peeled and deveined


Step 1 



Combine first 10 ingredients in a large pot. Cover and bring to a boil over medium-high heat for about 12 minutes. Reduce heat to medium-low and cook, covered, for another 12-15 minutes, stirring often, until pasta is al dente.


Step 2



Remove from heat. Stir in spinach and shrimp. Cover and let sit for 10 minutes. Stir before serving, top with parmesan cheese.

When you put the shrimp in and cover and leave for 10 mins....is the burner on low or off?
